Homemade Totoro Shortbread Biscuits

Totoro & friends shortbread biscuits with coloured icing! Baked by me and baby sis, Fafi :3

Unbaked Cheesecake Recipe

Had the back of fafa's white chocolate Hello Kitty Easter egg left so I wanted to re-decorate it and made a cheesecake just for the Hello Kitty head. Lili baked it with me - she said she had never baked before! 

I used a chopstick and melted milk chocolate to draw the neko face :3
The rose is made from sugar paste.

This recipe is quick and easy~ took us 30minutes to prep
RASPBERRY, BLUEBERRY & WHITE CHOCOLATE CHEESECAKE
With a shortbread base (Unbaked version)
10-12 servings, about 250 calories per serving. nom nom!

RECIPE

Base:
200g shortbread, crumbs. (Alternatively you can use the traditional base using digestives)
50g melted butter

Filling:
300g soft cream cheese
100g caster sugar
2 tsp of lemon juice
15g gelatine (dissolved in boiling water, cooled)
200g melted white chocolate
150ml double whipping cream (lightly whipped)
Topping:
200g fresh raspberries
100g fresh blueberries
50g castor sugar
Icing sugar to dust

METHOD

Crush shortbread in a bag until crummy.
Stir in the melted butter.
Press mixture into the base of a greased tin. Mine was about 9" wide

Beat the cream cheese, castor sugar and lemon juice using an electric mixer.
Add the gelatine mixture and melted chocolate stirring until smooth.

Pour onto the biscuit base.
Refrigerate for 3 hours until set. 

Whilst setting, make the raspberry glaze.
Use 100g of raspberries and add sugar. Boil in a saucepan until the right consistency.
If too thick, add water - too runny boil for longer.
 

Seive glaze to remove seeds.
Decorate as desired. I have chosen to cover the whole top of the cheesecake.
 Decorate with fresh summer fruits. Dust with icing sugar.

Floppy hat & DIY skull pockets
A while ago, someone said they loved how I wore Primark but made it look expensive.
But I hadn't actually worn anything from Primark at all...I have some Primark pjama bottoms and some tights but that's about it. At the time I was quite offended, not by the person as they were simply being nice (bless ^o^)but the fact that Primark must have some decent clothes for them to look like mine which I pay 10 x more for? My sis went in and brought me a lovely dusty pink sheer blouse. lovee it! couldn't believe it was from Primark.
I have nothing agaisnt the store... Yes, quality might be poor but overall, it's the masses and masses in which they produce each item which uninterests me.
So I decided to customise it a little 8-)

Such a sunny day but I'm stuck indoors finishing off this uni work, I've got lemons in the fridge and no Salmon to juice it with so I made a simple...Cloudy Lemonade 8-)

Michelle's Birthday Cake

Baked a cake for my prettyy cousin Michelle!!
It's actually her Birthday today. HAPPY HAPPY BIRTHDAY!! ♥

Went to give her the cake yesterday and also view her uni halls, it's so nice for a uni hall it was ready furnished like Ikea-y. I didn't go to her party because had work to do...but as if I managed to do much work anyway. fail  -___-"

Well I baked this for her~ first time trying this multi layered cake.

strawberry mousse, with white chocolate and vanilla sponge, vanilla cream cheese frosting and strawberry jello!

I didn't have the deep baking tin, so I had to do each layer seperatly which made it a little more difficult >_<
Was a nightmare too because I had to make so many trips to Tesco because didn't have all or enough ingredients~my own fault! Thanks to lili who went out for me one time- saved me time hehee.

Chinese New Year, Valentine's Day & My birthday.

Been busy celebrating so I haven't given myself any time to blog. I mean...CNY lasts for 15 whole days! horhor ^o^
I'll be off to London tomorrow, then Paris Friday morning for the weekend to come home to my birthday on Monday. I'm so excited, eep! (Ok. I started writing this post before Paris but actually, I've been & gone)!! Will blog about Paris & my birthday asap :P

Part 1: CNY

The 15th and final night of CNY, you are supposed to eat 湯圓 (tong yuen) to celebrate 元宵節.
Me & lala did make some with (wu tao) but it was so yummy I ate it before taking a photo. haha next time :9

Part 2: VALENTINE'S DAY

My 7th Valentine I have had with my bf Ken

I guess I have to confess my age now because you're going to think I'm really old. But in fact I'm going to be 21 on Monday!! Feel a little embarrased now...been with him since I was 14. hehe.
He got me a hello kitty bed warmer which I already had!!! The only difference was the colour and size of her hearts on the dress. She sits in my room with specs so I don't understand how he didn't realise I already had one. BUTTT i love hello kitty so I don't mind having a twin.
Feeling sorry for all our single friends, me & Ken went out to eat with them lol. We went to have Hotpot & Tenpanyaki @ Hans Dynasty, Nottingham. I love it there because everyone gets their own little pot (++Hygeinic)

 DIY time: Wore a red maxi from Topshop which I customised with a mesh heart.
Lil's orange Motel dress already had mesh xP
Also did my own 3D nails for the first time. (Not gel or acrylic - just natural nails)
Was going to get a little chickadee called Mary Ta to do them because she is amazing...but I thought I could do them myself. so why not? Also I can buy all the gems/glue etc for the same price as she would charge me for one set :P I only do nails for myself not for business so don't ask haha.
