Unbaked Cheesecake Recipe

Had the back of fafa's white chocolate Hello Kitty Easter egg left so I wanted to re-decorate it and made a cheesecake just for the Hello Kitty head. Lili baked it with me - she said she had never baked before! 
I used a chopstick and melted milk chocolate to draw the neko face :3
The rose is made from sugar paste.

This recipe is quick and easy~ took us 30minutes to prep
RASPBERRY, BLUEBERRY & WHITE CHOCOLATE CHEESECAKE
With a shortbread base (Unbaked version)

10-12 servings, about 250 calories per serving. nom nom!
RECIPE
Base:
200g shortbread, crumbs. (Alternatively you can use the traditional base using digestives)
50g melted butter
Filling:
300g soft cream cheese
100g caster sugar
2 tsp of lemon juice
15g gelatine (dissolved in boiling water, cooled)
200g melted white chocolate
150ml double whipping cream (lightly whipped)
Topping:
200g fresh raspberries
100g fresh blueberries
50g castor sugar
Icing sugar to dust

METHOD

Crush shortbread in a bag until crummy.
Stir in the melted butter.
Press mixture into the base of a greased tin. Mine was about 9" wide

Beat the cream cheese, castor sugar and lemon juice using an electric mixer.
Add the gelatine mixture and melted chocolate stirring until smooth.
Pour onto the biscuit base.
Refrigerate for 3 hours until set. 
Whilst setting, make the raspberry glaze.
Use 100g of raspberries and add sugar. Boil in a saucepan until the right consistency.
If too thick, add water - too runny boil for longer.
 

Seive glaze to remove seeds.
Decorate as desired. I have chosen to cover the whole top of the cheesecake.

 Decorate with fresh summer fruits. Dust with icing sugar.
